Coconut Kefir and Raspberry Parfait

Ideal for breakfast, snack or healthy low GI dessert. Live bacteria in kefir are good for the digestive system. Gluten and dairy free.




Ingredients (serve 4)


60g Toasted flaked almonds

40g desiccated coconut, lightly toasted

500g Raspberries

Honey or maple syrup (optional)


Place 100g of raspberries in a blender and process to form a smooth sauce. Sieve out the seeds. Start with a layer of whole raspberries and a little of almonds at the bases of four glasses. Spoon in the kefir, then top with a little of the desiccated coconut and drizzle over a little of the sauce. Repeat the layering, ending with a layer of raspberries and a scattering of almonds. Add a drizzle of honey or maple syrup on top if preferred.

Keep in the fridge until ready to eat.


Tip: Add a layer of homemade granola for a healthy breakfast.
