A piece of shop-bought brownies eaten occasionally as part of a healthy diet should not make you feel guilty. But this is a kind of brownies that you may eat (one) more often without feeling guilty at all!
Ingredients
(make 16 squares)
200g dark chocolate (70% cocoa mass)
100g butter (or use extra virgin olive oil instead if dairy-free)
90ml extra virgin olive oil
1 shot expresso
1 tsp vanilla extract
2 tbsp maple syrup
3 eggs, beaten
60g pea protein powder (I use Nuzest rich chocolate flavour)
175g ground almonds
Melt the dark chocolate and butter over a very low heat or using double boiler method. Add the olive oil, expresso, vanilla extract, maple syrup and mix well. Add the beaten eggs followed by the protein powder and ground almonds.
Transfer to 8’’ square baking tin and bake at 150 Celsius (fan oven) for 20-25 minutes
Let it cool completely before cutting into 16 squares. Serve with a handful of juicy berries or cherries.
