Colourful purple cabbage, red onion, carrot and beetroot are high in antioxidants and fibres. Paired well with grilled chicken.
Ingredients (Serve 2)
¼ (approx. 150g) Red cabbage, finely grated
½ Red onion, finely grated
1 large Raw beetroot or carrot, grated
80 g Cherry tomatoes
2 Tbsp Extra-virgin olive oil
2 tsp Apple cider vinegar
1 Tbsp Lemon juice
1 tsp Clear Honey (optional)
a handful of Flat leaf parsley, chopped
a pinch of Himalayan pink salt
Mix the red cabbage, red onion, tomatoes, carrots and/or beetroot in a large bowl.
Combine the olive oil, lemon juice, honey, salt and vinegar in a small bowl and stir well. Drizzle the dressing over the vegetables. Sprinkle with the parsley. Enjoy!
